How to change default membership level

Where can I edit to change the default join membership level to be something other than Standard or Promotion?

It's under the Settings > Memberships

This is where you can Create a New Membership and set permissions.

If you want to disable Standard and Promotional, you will need to delete all permissions for Non-Member & Standard and uncheck Enable promotional membership. This will offer a paid only site.
