Predefined Values

Okay, I am obviously having a fried brain experience because I can't figure this out. I'm trying to add fields to the Join Builder. Am I supposed to see the predefined values at the bottom in an inactive state?

Do I create a "New Item" and use one of the predefined values listed and the software will automatically set the options/dropdown choices? For example, Religion: I'd like that to be shown in the Join questionnaire. I'd like all those choices in the Predefined Values under Religion.

How do I get the things in the Predefined values at different places in "Fields Builder?" I hope I'm making enough sense to get an answer.
