 How can this be done? I'm not sure if there is a script I need to execute, or files I need to copy via FTP - but I can't seem to find any way to upgrade... and apparently that's the only way to patch up the fact our site is being flooded with porn!

Unfortunately you have to do it one version at a time. So you will have to do the upgrade from 7.0.4 to 7.05, then from 7.0.5 to 7.0.6 and so on. So for each version upgrade you have to:
1. Download the patch zip from here: http://www.boonex.com/trac/dolphin/wiki/Dol7Upgrade
2. Unzip it and upload it to your server, overwriting the existing files.
3. Run the upgrade script in the /upgrade directory.
